Ham and Eggs Casserole

I was reading For Maine Only by my favorite author, Edmund Ware Smith today, and came across a recipe, likely enjoyed at countless hunting camps.

  • Boil and mash six Maine potatoes, beating in butter and cream.
  • Add salt and pepper.
  • Place in a large baking dish and indent surface in six places with back of a large mixing spoon.
  • Into each indentation, press a slice of ham.
  • Over the ham, in each indentation, break a large fresh egg laid by a Maine hen.
  • Over all sprinkle grated cheese liberally.
  • Bake in a medium oven until eggs are shirred and cheese is golden brown.
