Russian Tea Cakes (also known as Mexican Wedding Cakes, snowballs, etc.)
OK the apple pie recipe got a good response from my friend Pascale, who would like to share some native recipes for wild game. I don't intend to become a food blog (there are a lot of good ones) but the occasional family recipe will be fun. I'm not really the recipe type. I don't really measure much, but I will try to get some of my own recipes up here too.
We got a bunch on a disk for a wedding present from Aunt Hellen. So I thought I'd share those.
Russian Tea Cakes (also known as Mexican Wedding Cakes, snowballs, etc.)
1 c. butter or margarine
1/2 c. sifted confectioner's sugar
1 tsp. vanilla
2 1/4 c. flour
1/4 tsp salt
3/4 c. finely chopped nuts (I actually grind up hazelnuts in the blender)
Heat oven to 400 degrees.
Mix butter, sugar and vanilla thoroughly. Measure flour by dipping (into stirred up, aerated flour) or by sifting. Stir flour and salt together; blend with butter mixture. Mix in nuts. Chill dough.
Roll dough in 1" balls. Place on ungreased baking sheet. (Cookies do not spread.)
Bake 10 to 12 minutes, or until set but not brown (just slightly at edges). While still warm, roll in confectioners' sugar. Cool. Roll in sugar again. Makes about 4 dozen 1" cookies.
